If you’re a foodie or just someone who likes to scroll IG for food inspiration, then you’re probably familiar with it. The food craze is simply sushi that you deconstructed and baked. Baked Tobiko Sushi emerged as a business during a pandemic

Business partners Patrick Co and Kiko Lee came up with the food business idea since both of them love to experiment with food. When the trend began during the quarantine, they tried 4 to 5 different kinds. However, they felt something was missing. For two weeks of trial and error, they were able to adjust the taste to what they think is suitable to their palate. After that, they did some taste testing with family and friends and listened to their criticisms.

On the other hand, like many businesses that started from scratch, these hardworking entrepreneurs faced challenges. The main problem is sourcing out the ingredients during the enhanced community quarantine. Kiko said that they try to preserve the freshness and quality of raw ingredients. And he added that the fact that they started late compared to others, the competition is really stiff. It also led to a higher price of raw ingredients because the demand went up. But then, they were able to solve their dilemmas by building good relationships with their online suppliers.

As Pinoy business owners who ventured to establish their own brand, Patrick and Kiko shared some advice to budding entrepreneurs out there. According to Patrick, “Start having the courage to really start from somewhere. And yung courage na yun kunin nyo sa hilig nyong gawin. If you really like food and cooking like sya (points out to Kiko) then ako naman I really like doing marketing, engaging with new people. Doon nyo i-focus yung mindset nyo to put-up the business. Kasi you’re enjoying it, you’re also earning money, and you also helping out a lot of people. Kasi may mga suppliers kami, hindi lang naman po kami yung natutulungan namin.”

Kiko added that those who want to start their own business must not be afraid of competition. “Sobrang dami po ng nagbebenta ng baked sushi. We just tried to be simple, we really didn’t try to be different. We knew that we will have our own market din po.”

The biggest lesson they learned from putting up their food business? Kiko mentioned, ” You should not be scared on what others might think of your product. You must believe in your product. If you really think your product is worth bilhin ng tao, go for it.”

Never compromises the ingredients’ quality and freshness

There’s a perception that anyone can make baked sushi at their own home. Maybe that’s true, but Baked Tobiko Sushi is a unique combination of homey and luxurious. Why? The answer lies in its primary ingredient: Tobiko. Tobiko is the Japanese word for flying fish roe and it’s used as a garnish for lots of sushi. It has a mild and smokey taste that many likes.

Patrick and Kiko are using it since this gives a more high-end appeal than shrimp eggs and salmon. Kiko said that this ingredient has a fresher taste as you can taste the sea that really complements with the seaweed or nori wrapper. They also prepare the baked sushi using premium all-natural ingredients only. All are homemade, even the furikake seasoning. Kiko mentioned that they only have one type of baked sushi as of now but they are planning to add another variant soon. They might have a spicy Baked Tobiko sushi in the future but that will depend on customer requests.

Their baked sushi business is open every day, from 10 AM to 6 PM only. You have to give them 24-48 hours to prepare your order since they make it from scratch. For payment modes, they accept bank transfers since they have BPI and UnionBank accounts. The GCash option is also happening soon. You can purchase a Baked Tobiko Sushi through delivery, either they will book a third party delivery service or you book the service.
