Chicken Inasal is one of the trademark foods of Bacolod. It is best to enjoy with some chicken oil sprinkled all over rice, dipping sauce made out of soy sauce, calamansi, and some chilis to spice things up. Kansi

Kansi is one of the best dishes in Bacolod. It is a Negrense dish that seems to be a combination of the top favorite and famous Filipino dish, Bulalo and Sinigang.

Kansi is a well-loved comfort food by the Bacolodnons. It is a boiled bone-in beef shank and usually comes with the bone marrow. KBL

Piaya

Piaya is an original delicacy from Negros. It consists of two pieces flatbread with muscovado sugar filling. Originally, Piaya only used to have a single flavor. But now, it has new and exciting flavor of ube. It’s the best and most popular snack souvenir as aside from being delicious, it is also affordable and is paired well with a good cup of coffee.

Napoleones

Napoleones is a local delicacy of Bacolod City which takes inspiration from the French Pastry, mill-fuille (a thousand leaves). It has three layers of puff pastry filled with cream or ganache, and then topped with icing and optional chocolate. The sweetness of this food is a perfect match to a cup of bitter black coffee.
