Eggplant Lasagna became a trend in TikTok this year. This recipe is perfect for people who are on a low-carb diet because lasagna sheets are replaced by thinly sliced eggplants. Before you do your layers, it’s better to prepare your eggplants first.
You must roast your eggplants first to have a tender texture, and so your lasagna will not be watery. For the sauce layer, you can mix your preferred red pasta sauce, or marinara, with herbs and spices of your choice. You can also add ground beef, or mushrooms if you want to be more healthy.
For the bechamel sauce, you just have to mix butter and flour in a pan, Add milk slowly, and stir it until smooth. After you prepare the ingredients, you’ll just have to layer the red sauce, the thinly sliced eggplant, then lastly, the bechamel sauce. Remember to add more cheese on top, because you can never go wrong with that.
Vietnamese Grilled Eggplant
This other eggplant recipe will surely change your mindset about eggplants. Compared to our first recipe, this Vietnamese grilled eggplant is so much easier to make. It is so nutritious, yet full of umami flavors. First, you have to prepare your fish sauce mix which includes fish sauce, vinegar, lime juice, and sugar.
Adding minced garlic, and chopped chili must be added for a kick of spice. Cut the eggplant in halves then grill it for seven to eight minutes on each side. For the final step, you will need two tablespoons of scallion oil heated up for fifteen seconds.
